Albert Roux to open restaurant at Scottish hotel
Albert Roux has signed a deal to oversee all catering at the Rocpool Reserve hotel in Inverness next year – his first venture in Scotland.
The French chef will spend the next few months training the hotel’s chefs and devising menus before opening Chez Roux on April 1.
Roux, who recently opened Brasserie Roux at the Sofitel at T5, said he had been impressed with the hotel’s standards after hosting gourmet weekends there.
Hotel general manager Kerry Watson said she was delighted about the decision.
“There’s not been a top chef who hasn’t worked with Albert Roux, so for him to choose to work with us in the north of Scotland is great,” she told BigHospitality.
Roux will now work with Rocpool Reserve’s head chef Davey Aspen and his team to create menus and a look for the hotel`s restaurant and bar.
Rocpool’s announcement comes seven months after the five-star hotel was bought by the owners of Inverlochy Castle, the country house hotel near Fort William, which employs Roux as consultant.
