New salad concept PICK.YOUR.OWN. to lay down roots in The City

A new fast casual restaurant concept that promises ‘to revolutionise’ the daily salad will launch in The City early next month.

As the name suggests, PICK.YOUR.OWN. will offer a customisable grab-and-go menu and will source organic and regeneratively-farmed produce where possible.

Customers choose a base, something crunchy, a dressing and finally ‘toppers’ including honey and mustard-glazed ham hock; and chilli-crusted Sockeye salmon.

Alongside the bespoke offering are six Signature Salads that include lamb shawarma and vegan option Avo & Chips.

On 73 Mark Lane near Fenchurch Street Station, PICK.YOUR.OWN. will be focused on grab-and-go but will also have some internal and external seating.

The concept will launch with a subscription model that will give customers access to discounted items, reusable lunch boxes, and cups.

PICK.YOUR.OWN. founder Christian West says this approach will help the business achieve its goal of receiving B-Corp certification within a year of trading.

“P.Y.O. is a nod to the great British tradition of picking your own fruit and veg; selecting the highest-quality, fresh produce directly from source,” West says.

“It acts as a conduit between a hand-picked selection of the best suppliers and the busy trade of London, offering consumers the chance to purchase higher-quality lunches that are beneficial to them, society, and the very soil from which they were grown.”
