The Michelin Green Star-rated Hay-on-Wye site is set to be taken over by a new operator, who will be revealed later this week.
The pair launched Chapters in 2019, having met at The Cellar Door in nearby Hereford.
Mark leads the kitchen, with previous international experience including a head chef role at Six Senses Zighy Bay in Oman.
Charmaine (pictured above) oversees front of house, as well as the wine list and the restaurant’s market garden.
The 22-cover restaurant is set within a converted chapel and offers a modern British tasting menu, with a strong emphasis on hyper-local sourcing, foraging and low-waste cooking.
Menus change regularly in line with seasonality and local supply, with preservation techniques such as fermenting and pickling forming a key part of the offer.
Charmaine McHugo said: “We are so proud of the restaurant we have created in Hay-on-Wye. We have met the most wonderful people along the way — the producers who have supplied us with incredible ingredients, the team who have worked alongside us, and our guests.
“But seven years is a long time and, as you will know if you have dined with us, the way we operate is personal and intimate. Mark is always in the kitchen and I am always in the restaurant. It is an unusual set-up, but one we believe our guests have really valued.
“We are incredibly proud of what we have achieved and grateful to everyone who has chosen to visit us — many of you time and again. We feel now is the right time to hand over the reins at St John’s Chapel and allow someone else to write the next chapter.”
The restaurant was awarded a Michelin Green Star in 2022 for its commitment to sustainability, an accolade it has retained since.
Chapters’ final dinner service will take place on 16 May.
