Announced via Mollis’ Facebook, Bond wrote that the venue would close on the 16 May following ‘some really hard months’.
In the post the chef went on to say the decision was “one of the hardest things I’ve had to do”.
“Mollis has been more than just a project, it’s been a space to create some insane flavours, to push ideas, and to build something with real personality.”
Mollis opened in 2022 in a former Chinese restaurant next to the chef’s flagship, which launched in 2017.
The venue offers various fried chicken flavours, including salt & pepper with hot honey; gochujang buffalo with blue cheese and pineapple; and orange glazed BBQ with sesame and chilli.
The restaurant also serves a range of chicken sandwiches, sides and soft serves accompanied by a list of wines, beers, soft drinks and both classic and house cocktails.
Bonds’ post went on to say that he was proud of his team and thanked supporters of the restaurant: ‘We’d love to see as many of you as possible before we close the doors. Let’s give it the send-off it deserves.’
Mollis was launched after Bond successfully raised over £100,000 through a crowdfunding campaign to overcome unexpected build costs.
