Rosina will open this summer in the heart of Wandsworth as Byatt’s first professional venture into Italian cuisine.
Named after his daughter, Rosie, the restaurant will include a main dining room, a stand-alone bar, a terrace, and a private dining room which will feature its own terrace.
The menu will focus on quality produce, wines, and recipes from across Italy, alongside ingredients sourced from the UK.
Rosina, which will be open seven days a week, from 12:00pm to 2:30pm and from 5:30pm to 10:00pm, will seat 50 guests, with space for an additional 25 on the terrace.
Several of Byatt’s existing team members, from both the front and back of house, are set to join the restaurant, ‘keeping his characteristic neighbourhood style at the heart of this new opening’.
“What I want to achieve with Rosina is simple really - I want people to feel better in leaving than when they were arriving,” says Byatt.
“I want them to appreciate - even if they don’t notice them all - the thousand small things that we do and have created to make them feel good.
That’s what I strive to achieve in my restaurants. The menu is a tribute to the most well-loved cuisine in the world, and I can’t wait to share it with this London neighbourhood.”
Byatt is best known for his Michelin-starred flagship Trinity but is also behind Brasserie Constance, Bistro Union and Charlie’s at Brown’s Hotel in Mayfair.
Last year the chef won the Michelin Chef Mentor Award and also teamed up with contract caterer BM Caterers to make his sandwich concept, Outside, a permanent fixture.
