Restaurant Eats Out: Soho

Restaurant teamed up with Foster to take a group of restaurant operators on a tour around Soho that took in ALTA, Khao Bird and Three Sheets.

ALTA

ALTA is a live-fire, Basque-inspired restaurant located in Kingly Court. The restaurant focuses on combining the bold, regional flavours of Northern Spain’s Alta Navarra area with premium, seasonal British produce, executing almost the entire menu over an open wood-fire hearth. The restaurant spans across two floors making it the largest dining space within the devlopement, which is just off Carnaby Street. The design incorporates natural textures, cracked cave-like walls, and muted earth tones centered entirely around a massive, theatrical open kitchen and charcoal grill. Sister to Japanese restaurant MOI, the restaurant is now led by former HUMO chef Robbie Jameson.

Khao Bird

Khao Bird is a buzzy, energetic Northern Thai barbecue restaurant located on Brewer Street in Soho. Having originally built a loyal following during a year-long residency above The Globe Tavern in Borough Market, the concept made the leap to a permanent Soho home last year. The restaurant stands out for bringing the smoky flavor profiles, bitterness, and fermentation techniques of Chiang Mai’s vibrant open-air night markets to central London. The restaurant is spearheaded by head chef Luke Larsson alongside restaurateur Mike Palmer. Key dishes include a galangal-spiked beef larb, whole crispy sea bass, and a rich Burmese khao soi curry topped with crispy noodles.

Three Sheets

Tucked away in Manette Street, Three Sheets is an intimate, world-class cocktail bar founded by acclaimed bartenders Max and Noel Venning. While the brand - which also has a site in Dalston - is primarily renowned for its drink program, the Soho site has a food menu devised by William Blank whose CV includes Lyle’s. Rather than overcomplicating the food, he applies his high-end sourcing and butchery expertise to elevated, satisfying bar fare designed to complement the clean flavor profiles of the cocktails. The Venning brothers are celebrated for their ‘deceptively simple’ approach to drinks, using complex kitchen techniques (like clarification, fermentation, and temperature-controlled infusions) behind the scenes to serve crystal-clear, intensely flavored drinks.
