Founded by childhood friends Oli Man and Greg Weaver, the duo behind Bermondsey’s These Days Bar & Kitchen, Stubby’s will open on 17 July on Parsons Green Lane and draws on the duo’s memories of time spent working in Australia.
Inspired by the Australasian approach to café culture, coffee will sit at the heart of the offer with drinks such as a cold brew and maple sea salt cloud latte; and blueberry and matcha cloud latte for Wimbledon sitting alongside more classic options.
The broader drinks menu will follow the same ethos and will include drinks from Down Under as well as a full cocktail menu. Wines come from Hunter Valley, and Marlborough vineyards, and joining the Stubby’s Pilsner on tap will be Byron Bay breer Stone & Wood. Bottles of Victoria Bitter, Carlton Draught and Pacífico will also be served.
Stubby’s food menu will focus on head chef Weaver’s obsession with sandwiches. Sold as half or full serves options will include Georgia - mutton adobo, potato scraggle, pickled kohlrabi on ciabatta; Tamsin - koji chicken thigh, chilli crisp, salsa verde, iceberg, and parm on focaccia; Barry - shiso porchetta, kare sauce, smacked cucumber on ciabatta; Candice - tempura aubergine, black caramel, sugarsnaps, sage, goat’s cheese on focaccia; and Katherine made with pancetta, spring onion, and egg mayo on sourdough.
Joining the sandwich line up will be small bites including pickles and sausage rolls as well as seasonal salads and new potatoes with chorizo, chilli crisp and taramasalata.
The site will also feature a deli offering a selection of homemade sauces, pickles and bakery items for sale alongside items such as linen, candles, glassware, and cookbooks.
“After 25 years of friendship and a decade working together, launching Stubby’s in Parsons Green feels like coming home for us,” say the pair.
“Inspired by the warm, relaxed hospitality culture we experienced in Sydney, we wanted to create a neighbourhood spot built around great coffee, quality food, good drinks, and a space that’s made for connection.”
