Thanasis has been part of the Saison restaurant culinary team, also located at Raffles London at The OWO, since March 2025. Prior to joining the restaurant, he was senior sous chef with Four Seasons Hotels and Resorts, working at La Dame de Pic, the two-Michelin starred restaurant in London that has since closed.
His career also includes experience with the Mauro Colagreco Group, and he has also worked at three-Michelin starred restaurant Odette in Singapore.
Thanasis will bring great energy, passion, and leadership to the role as he leads Mauro Colagreco at Raffles London at The OWO into its next chapter, according to the restaurant.
