Launching on 13 September until the 15 November, the partnership introduces two sandwiches which will be available across selected PAUL sites in London, Oxford and Reading.
The range comprises Le Boeuf Blanc, featuring roast beef, celeriac remoulade, horseradish and truffle oil; and the vegetarian Le Brie Blanc with brie with caramelised onions, marinated chicory, crushed walnuts, truffle oil and celery.
Both products have been developed around autumnal flavours and are designed to be served in PAUL’s signature freshly baked baguettes.
Founded in Lille in 1889, PAUL has 32 UK locations, offering freshly made breads, sandwiches and pâtisserie.
“PAUL and I share a belief that the simplest food deserves the greatest care,” says Blanc, who achieved two Michelin stars Le Manoir aux Quat’Saisons in Oxfordshire in 1984 and held them for over 40 years.
“A beautifully baked baguette, excellent seasonal ingredients and the right balance of flavour can turn lunch into something truly special.
“These recipes are rooted in the food I grew up with in France but created for how people eat today.
“It has been a joy to work with a family business that has protected its craft for five generations, and I hope each sandwich brings a little French pleasure to the day.”
Julia Powell, CEO at PAUL UK adds: “Raymond is one of the greatest ambassadors for French food, so there is a genuine affinity between his philosophy and everything PAUL stands for.
“This collaboration brings his creativity and understanding of flavour together with the bread-making heritage that is at the heart of our family business.
“The result is two exceptional sandwiches which feel unmistakably French and unmistakably PAUL.”
