A new Italian all-day dining concept combining a restaurant, café, and cocktail bar is set to open at The Webster Covent Garden this autumn.

Founded by hospitality trio Daniele Pampagnin, Jake Mason and Carmela Pia, the concept will span three floors.

Carmelina’s, the 100-cover restaurant, will occupy the ground floor of the ten-storey hotel and will feature an open kitchen, counter seating and a dedicated wine bar. Designed by Red Deer, it will feature a black-and-white tiled floor, natural materials and Italian-inspired interiors.

Upstairs, Carmelina’s Al Banco will operate as an all-day café-bar inspired by Milanese neighbourhood bars, featuring a terrace and offering breakfast and coffee through to aperitivo and evening drinks.

The kitchen will be overseen by head chef Simone Serafini, with co-founder Daniele Pampagnin, whose experience includes Nobu and Soho House, overseeing.

The menu will focus on handmade pasta and seafood, with signature items including a plate of red Sicilian prawns, and porchetta with friarielli.

Breakfast will include dishes such as eggs royale, focaccia scrambled eggs and diavola shakshuka. The drinks offering will include classic cocktails and a curated wine list.

Completing the F&B offer at the Lincoln’s Inn Fields hotel is Carla’s List. Located downstairs, the 60-cover cocktail bar will be led by bar manager Peppe Corallo and will offer an ‘innovative’ cocktail menu alongside live entertainment and events.

“It’s about that Italian way of life, where you come in for one thing and somehow you’re still there six hours later,” says co-founder Jake Mason.

“A coffee becomes lunch, lunch rolls into aperitivo.

“It’s generous food, warm service and real hospitality.

“The kind of place you never feel in a hurry to leave.”

The Webster Covent Garden will have167 bedrooms, with guests able to order food from Carmelina’s via room service and bottled cocktails from Carla’s List.
