The pub will serve seasonal, ingredient-led dishes, with a focus on independent producers and British seafood. The menu will change daily according to the day’s catch and seasonal produce supplied by Group’s market garden at Bruern Farms in the Cotswolds.
Public House Group was founded by Phil Winser, James Gummer and Olivier van Themsche following the opening of The Pelican in Notting Hill in 2022.
The group has since opened The Bull in Charlbury, The Hero in Maida Vale, The Fat Badger on Golborne Road and The Hart.
The Horses will be designed and built by Public House Studio, the group’s in-house design team overseen by Phil Winser.
Public House Group also operates a food procurement model that sources directly from regenerative farms and growers.
Winser spent several years in New York, working with clients including LVMH and Bentley, before founding The Fat Radish.
Gummer also worked in New York before returning to London, where he became maître d’ at The Wolseley. He later opened 7 Saints in 2018 in Notting Hill.
Van Themsche has worked across technology, finance and hospitality for more than 20 years. He founded events agency Institut Bonheur and launched venues including Les Jardins de Bagatelle and Cirque Bonheur.
