The project, which follows the closure of his White City flagship Endo at the Rotunda last year after a devastating fire, was first announced in July.
Most of the new details concern Moga, the listening bar located on the townhouse’s first floor.
Moga will serve a menu that includes the return of Endo at the Rotunda’s red mullet sandwich, as well as handmade soba and a Moga-style cocido madrileño inspired by Kazutoshi’s time in Spain.
Its tea-led cocktail and food menus will draw on Kazutoshi’s travels through Paris, Madrid, Milan, Hong Kong and Tokyo, with the drinks programme being created in collaboration with Postcard Teas.
The bar will contain a private drinking den for just two guests, decorated with bespoke works by Japanese illustrators.
Kazutoshi’s personal vinyl collection will be played through custom Taguchi speakers, with the music programme being developed alongside Ken Sakamoto, a friend of the chef and manager at Japanese fashion label Comme des Garçons.
The venue’s 10-seat omakase restaurant, known simply as ENDO, has also revealed details of its principal Japanese suppliers.
They include Hayashiya at Tokyo’s Toyosu Market for winter-harvested nori; Mochizuki in Shizuoka for three-year-grown Mazuma wasabi; and Kajita Shoten in Ehime for double-brewed soy sauce.
Its bespoke dashi will use ingredients sourced from a historic katsuobushi producer in Kyoto and a kombu specialist in Kobe.
The Blacklands Terrace townhouse has been designed with architect Javier Villar, who previously worked with Kazutoshi through Kengo Kuma & Associates.
ENDO is modelled on a traditional Japanese ryokan, while the wider townhouse design is rooted in the period spanning the late Taishō era to 1933.
It has also been revealed that Kazutoshi’s knives from Endo at the Rotunda survived the fire.
They have been restored by Japanese blacksmith house Shodai Masayoshi and blade restorer Rodrigo Batista for use at the new restaurant.
ENDO will launch in early October.
Moga will initially be available exclusively to its diners before opening for separate bookings in December.
