Woongchul Park, the chef-owner of Sollip, has created Papa Dak, serving crispy, double fried chicken glazed in Korean sauces in Flat Iron Square in London Bridge.
Named after ‘papa’, an affectionate term for a father, and ‘dak’, the Korean word for chicken, Papa Dak draws on Park’s Korean heritage and love of fried chicken and brings his focus on high-quality ingredients and considered cooking to a more casual style of food.
It serves serve two signature fried chicken dishes, both finished with rice crisps sprinkled over the chicken for extra crunch. Korean Red (£12) is a classic yangnyeom style chicken, coated in a sticky, sweet and spicy glaze; and Guinness Black (£13), which comes glazed in a Guinness sauce, Park’s love letter to the most sold pint in London, but with no hangover guaranteed.
Alongside the fried chicken are So-Tok So-Tok skewers of grilled smoked sausages with Korean rice cakes, and sides including a kole-slaw of carrot, aekjeot (fish sauce), Korean chilli and sesame, and pickled kohlrabi with garlic and ginger.
For groups, The Korean Feast serves four and brings together both chicken styles, skewers and both sides for £36.
“The menu at Papa Dak is all about big flavour in every bite - saucy, delicious and exactly what you want when those indulgent cravings hit,” says Park.
