Polina Sychova and Eugene Korolev, the founders of Notting Hill restaurant SINO, are to open Sit With Us, a new coffee house and bakery in Notting Hill, this November.

Sit With Us will combine speciality coffee, an experimental drinks programme and an in-house bakery, alongside a programme of community events.

Coffee will sit at the heart of the concept, with a core offering of flat whites, espressos, filter coffees and rotating single-origin beans. Alongside these, the business will operate a dedicated off-site laboratory to develop an evolving menu of coffee and tea drinks, using techniques including cold extraction, clarification, infusion, fermentation and carbonation.

The resulting drinks will combine coffee, tea, fruit, botanicals and spices with house-made syrups, concentrates, foams and extracts. Signatures will include the Buckwheat Cloud, made with toasted buckwheat, espresso, dark chocolate and cultured cream; Cherry Soda, a sparkling cold-pressed coffee with cherries; and Clear Coconut, a clarified coconut preparation that can be paired with coffee or matcha.

The tea offering will include a Mandarin, Basil & Hojicha, combining roasted Japanese green tea with mandarin, fresh basil and toasted soybean kinako cream foam.

Sit With Us will also have an in-house bakery producing breads and pastries throughout the day. The menu will pair traditional baking techniques with flavours drawn from different culinary cultures, with offerings including poppyseed and sour cherry pain suisse; apple and dulce de leche Danishes; buckwheat miso caramel kouign-amann; and cultured butter, pistachio and raspberry croissants. Savoury and bread offerings will include black garlic brioche, freshly baked sourdoughs, dark rye breads and buckwheat baguettes.

Breakfast dishes will include cottage pancakes with yoghurt and seasonal fruit; baked apple and brown butter porridge; and soft-boiled eggs with rye toast and whipped butter. At lunch, guests can expect freshly made sandwiches, salads, seasonal dishes and a daily house-made broth served with seasonal garnishes.

The site will host weekend DJ coffee mornings, guest coffee collaborations, bakery tastings and other events designed to bring the local community together.

The principle of connection informs the brand’s visual identity. Its wordmark has been created using the handwriting of nine members of the team, with a different letter taken from each person’s handwriting to form a single logo. Illustrated characters and handwritten details will feature throughout the branding, reinforcing the idea of different people coming together.

The Notting Hill site will feature a pale blue palette, warm timber, stainless steel and tactile neutral finishes, combining a contemporary aesthetic with a warm atmosphere.

“Sit With Us is about pushing both coffee and connection forward,” says Sychova.

“We wanted to show that exceptional everyday coffee can sit alongside more creative, unexpected drinks, within a brand and space built to bring people together.”

Sychova and Korolev opened SINO in Notting Hill in 2025. The restaurant serves contemporary Ukrainian-inspired cuisine, bringing elements of the country’s food culture together with modern Western cooking techniques in a sharing-plates format.

Korolev, a Ukrainian chef whose career includes positions at Michelin-starred restaurants including Vendôme, Atelier Amaro and Benoit, served in Ukraine’s special forces following Russia’s full-scale invasion in 2022. During his military service, he continued sketching food ideas for a future restaurant, which later helped inform the development of SINO. Korolev is also president of Ukraine’s Bocuse d’Or team.

He left the army in 2023 and subsequently joined forces with Sychova, a former journalist who had reported on major political events in Ukraine, including the 2004 Orange Revolution and Russia’s annexation of Crimea in 2014. The pair developed the restaurant around Korolev’s ideas and recipes, with the chef relocating to London in November 2023 to work on the project full time.
