The move follows the departure of Tom Sellers at the restaurant, located within the 1 Hotel Mayfair in London, in June this year to focus on his new restaurant projects.
Aguirre was previously head chef at Mauro Colagreco at Raffles London at The OWO where he was head chef and led the team from opening in 2023 to the award of a Michelin star in 2025 and its retention in 2026.
His career began at the three Michelin starred Mirazur, where he trained in seasonal, produce-driven cooking, and has since taken him through Argentina, Chile, France, the UAE and Singapore.
At Dovetale, Aguirre takes inspiration from the breadth of European cooking. His new menu includes Carlingford oysters and Umai caviar, alongside bite-sized snacks such as beef tartare, served on a potato rosti with kale; and charcoal pizza fritta topped with Cantabrian anchovies.
Other dishes include heritage beetroot with stracciatella and pomegranate, roasted scallop with anchovy garum and cauliflower XO; provola and bottarga risotto with citrus zest; steak frites; and crab tonarelli with chilli and preserved lemon.
Dovetale opened in July 2023.
