Pasture Restaurant Group is to enter the Manchester market with four venues at the St Michael’s development, its largest project to date.

The independent restaurant group, which was launched by chef-owner Sam Elliott in Bristol in 2018, has partnered with Relentless Developments and Salboy to operate a flagship Pasture restaurant, a hotel lounge, a historic pub and an outdoor dining destination within the city centre scheme.

The deal will see Pasture Manchester take a ground-floor site within St Michael’s 43-storey tower, bringing the brand’s open-fire cooking and steak-led offer to the city. Alongside the restaurant, the group will operate W Lounge at the forthcoming W Hotel Manchester, The Abercromby, a restored historic pub, and Terrace, an all-day outdoor dining concept serving Mediterranean-inspired dishes.

“We’ve grown from one restaurant in Bristol by putting the food, the team and the guest experience at the heart of each opening,” says Elliott. “That approach will carry through all four Manchester venues, with each having its own identity.”

The openings form part of the second phase of the St Michael’s development, a joint venture between Relentless Developments, led by Gary Neville and Anthony Kilbride, and property developer Salboy. The wider scheme will also include a 162-bedroom W Hotel and 217 W Residences.

The move represents a significant step in the growth of Pasture Restaurant Group, which has expanded from its original Bristol restaurant into a business spanning Bristol, Cardiff and Birmingham. Its portfolio includes the Pasture steakhouses, small-plates concept Parallel, cocktail bar Nightshade, Prime by Pasture and Pasture Butchers.

The company is also preparing to launch its first international site, Pasture Barcelona, in Spain.

Gary Neville, director of Relentless Developments, says the addition of four concepts from a single independent operator would add further depth to the hospitality mix being assembled at the scheme.

“Pasture is exactly the kind of operator we want to attract. Sam and his team have built something special, and bringing four distinct concepts into the development will add another layer of quality and personality to what we’re creating here,” he says.

“Each venue will have its own identity and appeal, helping St Michael’s become a destination that works across different occasions, from casual drinks and outdoor dining to premium restaurant experiences.”

The openings will join operators including Big Mamma Group’s Circolo Popolare, Chotto Matte and Grind at the St Michael’s development.
