The Denmark born brand’s first site in the Midlands, the restaurant will be located within the £1.2bn Paradise Birmingham development, occupying a ground-floor space at Three Chamberlain Square with an adjoining terrace.
The 250-cover restaurant will create 60 jobs locally.
Designed by award winning Danish architects OEO Studio whose projects include Noma Kyoto, and more recently, Sticks’n’Sushi Tivoli Gardens, Copenhagen – the restaurant will combine the brand’s signature Danish design approach with Japanese references through the use of timber and structural rhythm.
The interiors will feature a warm material palette with rich, layered tones, creating a refined and inviting dining space.

Paradise is one of the city’s most exciting developments, and we’re looking forward to bringing our blend of Danish design, Japanese dining and generous hospitality to the Midlands for the first time,” says SticksʹnʹSushi group CEO Andreas Karlsson.
The announcement of SticksʹnʹSushi Birmingham follows a string of regional launches including Leeds, Manchester and Glasgow.
Founded in Copenhagen in 1994 by half-Danish, half-Japanese brothers Jens and Kim Rahbek and Thor Andersen, Sticks’n’Sushi now operates 33 restaurants worldwide, including 12 in Denmark, three in Berlin, and 17 in the UK.
