Sticks’n’Sushi surpasses £100m sales mark

Danish-Japanese restaurant group Sticks’n’Sushi has declared 2025 a “breakthrough year” after total revenue surpassed £100m for the first time.

The group, which operates 17 restaurants in the UK, 12 restaurants in and around Copenhagen, and three restaurants in Berlin, recorded turnover of £104.8m for the 12 months ending 31 December 2025, representing 6% growth on the previous year.

Adjusted EBITDA reached £8.2m, while the year was capped by a record trading day on New Year’s Eve, when the business generated more than £1m in sales for the first time.

In December 2025, Sticks’n’Sushi opened in George Square, Glasgow, marking its 31st restaurant and its first move into a major UK city outside the South East.

The group has continued its expansion strategy in 2026 with the opening of its second Northern restaurant in Spinningfields, Manchester, taking the estate to 32 restaurants alongside three catering and delivery kitchens in the UK.

The business has also announced plans to open its first restaurant in Prague later this year through its first joint venture partnership, while Birmingham and Leeds have been identified as the next UK cities for expansion.

Its B2B and catering operation is also continuing to grow, with a partnership with the ‘Tokyo Nights’ Sumo event in Greenwich set to be a key highlight of the summer 2026 programme.

Founded in Copenhagen in 1994 by half-Japanese, half-Danish brothers Jens Rahbek and Kim Rahbek, alongside Thor Anderson, Sticks’n’Sushi is one of Denmark’s most established restaurant groups. It made its UK debut in 2012.
