Called Beaufort Wine Bar, it’s extensive wine list will span six continents, with half of the collection available by the glass using Coravin technology. It will include vintages from 1975 to 2025, covering First Growth Bordeaux, Grand Cru Burgundy, mature champagne and wines from lesser-known regions. A selection of grape-based spirits and wine cocktails made with cognac, grappa and pisco will also be available.
Head sommelier Romain Audrerie will lead the wine programme, bringing more than 15 years’ international hospitality experience, including as part of the opening team at Chiltern Firehouse and later as global wine director for André Balazs Properties.
A food menu will also be available, that will include sharing dishes and a tableside carving service featuring cured meats and Jamón Ibérico served from a custom-made flywheel slicer trolley. Other dishes will include Hampshire trout with Dorset wasabi and Buddha’s hand; black truffle cheese fondue; a caviar selection; and British cheeses. Live music will feature throughout the evening.
Beaufort Wine Bar will join The Savoy’s existing food and beverage operations that include Gallery, which serves an all-day menu and afternoon tea; Scoff, a scone shop; Savoy Grill; The River Restaurant; and Restaurant 1890, which holds a Michelin star.
