Called Kasi, the 85-cover restaurant is scheduled to open in late October and will be Singh’s first UK project outside London.
Singh, who is widely known as Chef Jolly, is behind The Great Indian in Finsbury Park.
Kasi takes its name from an ancient name for Varanasi and will draw inspiration from the cultures and cuisines found along the Ganges, from the Himalayas to the Bay of Bengal.
Its menu will combine open-fire cooking and traditional Indian techniques with seasonal British produce.
Dishes will include Hampshire lamb paratha; banana leaf-roasted Rivers Test and Itchen trout with coriander, garlic and curry leaf butter; roasted Wessex saddleback pork belly with buttered pao buns; and paneer lotus kofta with sundried mint and fennel.
Traditional tandoori dishes, biryanis, lentils and breads will also feature.
Kasi will offer an à la carte menu alongside a thali lunch and three and five-course tasting menus, with wine and cocktail pairings.
“The food at Kasi will tell the story of the Ganges through the ingredients, flavours and cooking traditions found along its banks,” says Singh.
“At the same time, it will be firmly connected to its home in the New Forest, making the most of the exceptional produce available locally and across the British Isles.”
The 4,349 sq ft restaurant will have additional seating on an outdoor terrace.
Its interiors, designed by Amit Dixit Design, will feature earthy tones, rich textures, gold detailing and statement lighting.
“Kasi represents an exciting new chapter for Careys Manor,” says the hotel’s general manager Steve Woodrow.
“Chef Jolly’s vision and reputation for exceptional Indian cuisine make him the ideal partner as we continue to evolve our dining offer.”
Kasi will join British restaurant Cambium and Thai restaurant Zen Garden at the 77-bedroom Careys Manor Hotel & SenSpa.
It will open for lunch and dinner from Wednesday to Sunday.
Singh began his career at Taj Palace New Delhi in 1993 before joining Marriott International, where his roles included head chef of Saffron at JW Marriott Mumbai, executive chef at London Marriott Hotel West India Quay and executive chef of JW Marriott Bengaluru.
Singh was a judge on Junior MasterChef India and hosted cookery show Ab Har Koi Chef. He now runs London-based consultancy Jolly Good Hospitality and has worked on restaurant projects including Shikar in Singapore, Riyasat in Doha and Cunard’s Aranya.
