Jackson Boxer to launch Vesper in Exmouth Market

Jackson Boxer will open a new restaurant in the capital next month promising ‘grown up pleasure and childlike joy’.

Called Vesper, after the Roman word for ‘Venus’ as the evening star, the restaurant will be housed in a 70-cover corner site at the west end of Exmouth Market.

The menu is set to include dishes such as oyster with green apple and chartreuse; croquette ‘Arnold Bennett’ with tarragon mayonnaise, raw beef and smoked pepper tostada; red mullet with smoked cream and golden tomato; sole fritters with pickled radish and curry sauce; and Dorset clams with black beans and white pepper.

Larger dishes will feature roast chicken with bread sauce and salted lemon; beef shoulder chop with shimeji mushroom and saffron rice; and grilled gurnard with crab butter and pickled pepper.

Dessert options, such as canelé with milk and rum; peach with pistachio and cardamom; and chocolate porter cake, will complete the menu.

The restaurant will serve cocktails described as ‘strong and cold’, alongside an approachable wine list with cellar selections.

The space designed by Jeramaine Gallacher will feature a bar at the entrance, a candlelit dining room and a terrace of bistro tables.

Boxer is currently chef-patron at Brunswick House, which he founded with his brother Frank in 2010, and culinary director of Cowley Manor and the Henrietta Hotel. His other projects include Orasay in Notting Hill, which he relaunched as Dove in January last year, as well as co-ownership of Below Stone Nest in London’s Chinatown.

“In Vesper we want to build a fitting tribute to London, the greatest city in the world - naturally cosmopolitan in outlook, fiercely proud of its native produce, at ease in its own unique skin, confidently hospitable to all,” says Boxer.

“Offering grown-up pleasure and childlike joy; a restaurant for the city we want to live in.”

Vesper will open for dinner Tuesday to Saturday and lunch Wednesday to Saturday.
