Pip Lacey leaves Guinness Open Gate Brewery

Pip Lacey has left her role as executive chef at the Guinness Open Gate Brewery after less than six months, Restaurant has learnt.

Lacey oversaw the food offer at two venues - Gilroy’s Loft and The Porter’s Table – at the £70m new microbrewery and culture hub in Covent Garden.

Gilroy’s Loft is a rooftop restaurant that takes its name from John Gilroy, the mastermind behind some of the most memorable Guinness campaigns and serves a seafood- focused menu celebrating the best of Britain’s coast.

The Porter’s Table, which pays homage to the porters of Covent Garden who moved goods through the markets, serves a sharing menu of British dishes focusing on locally sourced ingredients.

It is understood that Lacey, formerly of Hicce in Coal Drops Yard and Michelin-starred restaurant Murano, is no longer involved in the project.

The Guinness Open Gate Brewery has been contacted for comment.
