Dean Banks to open new Mediterranean-style restaurant in St Andrews

Edinburgh-based chef Dean Banks has revealed plans to open Amber, a Mediterranean-inspired restaurant in St Andrews.

The new concept will take over the former BrewDog site in the town, with Banks announcing he had picked up the keys for the venue in a video shared on Instagram. He also cited plans to clear out and renovate the site, adding that the team hopes to open the restaurant later this summer.

Amber will be inspired by some of Banks’ favourite destinations across Greece, Italy, Portugal and the south of France. The menu will focus on simple Mediterranean dishes, combining locally sourced ingredients with produce imported from the Mediterranean.

In the video, Banks said he would be sharing ‘everything we’re going to do’ throughout the renovation process before encouraging followers to ‘stay tuned’ to see what the team creates with the ‘beautiful site’.

Banks is the founder of the Dean Banks Group, whose portfolio includes Dulse Leith and Dulse West End in Edinburgh, Haar in St Andrews, Temple Lane in Dundee and Restaurant 1925 - the relaunched version of his flagship Pompadour restaurant at Edinburgh’s Caledonian Hotel.

He began his career at 15 years old and has since gained experience in Rick Stein’s The Seafood restaurant as well as becoming a finalist on MasterChef: The Professionals in 2018.
