IRO Sushi has opened new locations in Maidenhead and Bristol as the fast-growing sushi chain accelerates plans to reach 100 locations by 2030.

The Bristol opening marks the company’s first restaurant in Southwest England, while the Maidenhead site strengthens its presence in the Home Counties.

The new restaurants feature the brand’s updated store concept, inspired by traditional Japanese izakayas, with technology integrated to improve operational efficiency.

IRO Sushi said it also has several additional stores under construction, including sites in Basingstoke and Ipswich, while leases have also been signed for Salisbury and two South London locations. The company expects all of the new outlets to open before the end of the summer, putting it on track to reach 40 sites nationwide and deliver between 10 and 15 openings during 2026.

“Opening two sites in a week that are nearly 100 miles away from one another has been a real test for our teams, but I’m so proud of how the team has adapted,” says Chhong Sherpa, founder and CEO of IRO Sushi.

“Now, we have two fantastic new stores in areas of real strategic importance for our brand that create a platform for us to introduce more consumers to restaurant-quality sushi at affordable prices.”

“As we continue our UK expansion strategy, with a string of new openings planned for the summer, the experience gained in this period will prove invaluable as we realise our ambitions.

“We look forward to sharing more about our upcoming stores in due course.”

Founded in 2014, IRO Sushi is described as ‘one of the fastest-growing sushi brands in the UK’.

At more than 30 quick-service restaurants nationwide, it serves fresh, made-to-order sushi and Japanese-inspired dishes.

After taking its first steps into franchising in 2019, IRO Sushi has scaled rapidly. Since August 2023, the group has opened over 20 locations.

Earlier this year the brand revealed total system sales reached £18.5m for the 52 weeks ended 31 December 2025, up 29% year-on-year, and revealed a 19% increase in like-for-like sales.
