Located on Sauchiehall Street in the former Oodles Wok unit, the restaurant forms part of IRO Sushi’s plans to reach 20 locations across Scotland as it continues its UK expansion.
The brand is also seeking franchise partners in Glasgow, Edinburgh and Aberdeen as it builds a pipeline for additional Scottish openings.
Founded in 2014 by trained sushi chef Chhong Sherpa, IRO Sushi serves made-to-order sushi and Japanese-inspired dishes. The group currently operates more than 35 locations, having opened more than 20 sites over the last three years. It also operates a franchise model that includes operational support and training.

“We have reviewed opportunities here for several months, and Sauchiehall Street gives us the right platform to introduce IRO Sushi to customers in Glasgow and build from there.
“We are already looking at further opportunities in Glasgow, Edinburgh and Aberdeen and believe Scotland could support up to 20 IRO Sushi locations over time.
“We will grow carefully with the right sites and franchise partners, while maintaining the quality, value and operating standards that have driven our growth.”
The Glasgow opening follows new sites in Bristol, Maidenhead, Tunbridge Wells and Woking earlier this year. In the first six months of 2026, the group recorded system sales of £11.1m, up 28% year on year, while like-for-like sales increased 20%.
IRO Sushi is targeting 100 locations globally by 2030, with expansion planned across the UK, Europe and the Middle East.
