Paul Sarlas is set to open a new all-day restaurant and bar Honeyshade above the Central Park Hotel in Bayswater next month.

The rooftop venue on Queenborough Terrace will combine a British brasserie concept with Levantine influences, overlooking Hyde Park and west London.

The restaurant will feature a stone oven for manakeesh and homemade flatbreads, as well as a grill serving steaks, seafood and slow-cooked dishes over an open flame.

The menu will run across breakfast, lunch and dinner, with ‘speciality’ coffee and breakfast dishes in the morning, followed by handmade pasta, salads and charcoal-grilled dishes at lunch. Evening service will focus on sharing plates, wine and cocktails.

Designed as a garden pavilion, the venue will feature natural light, ‘extensive’ planting and a terrace.

The interiors will draw on Georgian and Victorian architectural references, with botanical elements reflecting the restaurant’s proximity to Hyde Park. The venue will also include a private dining room for corporate dinners, celebrations and private events.

Sarlas is well known in the restaurant sector, having held key roles at a number of restaurant groups, including Ping Pong, Chotto Matte and Noble Hospitality Group, the company behind Angus Steakhouse and Alley Cats Pizza.

With Honeyshade, I wanted to create the kind of restaurant I have always believed in: somewhere with its own identity, great food and genuine hospitality, but without unnecessary formality,” says Sarlas.

“A place that feels just as natural for breakfast or a relaxed lunch as it does for cocktails, dinner or an evening with friends.

“The food has the familiarity and generosity of a British brasserie, with Levantine influences bringing vibrancy, flavour and character.

“Most importantly, I want Honeyshade to become part of the neighbourhood, somewhere people genuinely enjoy spending time and want to return to.”

The opening comes as Bayswater undergoes continued regeneration and investment.
