Tom Sellers to oversee F&B at Stoke Park as Buckinghamshire country club ‘enters new chapter’

Story chef Tom Sellers is to oversee five new F&B concepts at Stoke Park as part of an ongoing overhaul of the Buckinghamshire estate and country club.

Close to Slough and Windsor, Stoke Park has been undergoing a period of “renovation and restoration” since being acquired by Reliance Industries Limited in 2021, the Indian conglomerate controlled by the Ambani family and led by billionaire chairman and managing director Mukesh Ambani.

The estate’s new F&B offer will launch next month and be overseen by Sellers’ HiStory Hospitality group, whose portfolio also includes Story Cellar in Covent Garden and the recently launched MOR at Carbis Bay Estate in St Ives.

Working alongside Sellers will be long-time lieutenant chef Tom Phillips and chef Dom Robinson, who joined the group more recently having previously earned a Michelin star as chef-patron of The Blackbird in Berkshire.

The Penn, named after former Stoke Park owner John Penn, will be the estate’s new flagship restaurant.

It will comprise a 48-cover dining room and an eight-seat private dining room.

Its à la carte menu will draw on British culinary history, seasonal produce and classical French technique.

Dishes will include terrine of spiced pig’s head with Scottish langoustine; roast wild sea bass with Orkney scallop; fish of the day en papillote; and venison Wellington Rossini.

Produce grown in Stoke Park’s kitchen garden, overseen by Kate Mannery, formerly head gardener at Le Manoir aux Quat’Saisons, will inform the menu throughout the year.

Four further concepts will open alongside The Penn: The Piano Bar, The Terrace & Glasshouse, The Tea Room and The Clubhouse.

The Piano Bar will serve classic cocktails, including an extensive martini selection, alongside a wine list with a strong focus on American producers.

The Terrace & Glasshouse will offer a lighter and more informal style of dining, with dishes including sourdough flatbread with wildflowers and herbs, seasonal salads, rigatoni with venison ragù and fish of the day.

Pizzas and barbecue dishes will also be served on the terrace. The concept will operate during the spring and summer, although the space will be available for private hire throughout the year.

The Tea Room will offer teas and coffees alongside viennoiserie, a daily tart made using fruit from the estate and signature Stoke Park scones.

Open daily, The Clubhouse will serve a combination of pub classics and Indian dishes.

Studio Shayne Brady has overseen the interiors of the restaurants and bars in partnership with the Stoke Park and HiStory Hospitality creative teams.

The estate’s wine cellar has been curated by HiStory Hospitality group beverage manager Carolina Seibel, while beverage manager Giuseppe Masala has developed its bar and cocktail offer.

Further details about the estate’s hotel, spa and wellness programme will be announced in due course.

Having trained under chefs including Adam Byatt, Tom Aikens, René Redzepi and Thomas Keller, Sellers opened Restaurant Story in Bermondsey in 2013 at the age of 26, winning a Michelin star within five months and a second in 2021.

His portfolio also includes Gwyn’s Bakery in Horsham and events business Once Upon a Time.

Last month, it was revealed that Sellers was looking to add a London pub to his portfolio.
