In Operation with...Dishoom

In this latest video from our In Operation with... series we visit Indian restaurant group Dishoom to find out about its origins, its people focus and future plans. 

From its King's Cross restaurant Kavi Thakrar, one of the founders and 'head babu', talks about how the Dishoom brand was created to 'pay homage' to India's bygone Bombay Cafes. 

The four-strong group, whose fifth site and first outside London opens in Edinburgh later this year, prides itself on its creation of a democratic all-day dining concept which he believes is as much about bringing people from all walks of life together as providing them with a strong food offer. 

Thakrar attributes much of Dishoom's success to the business's 480 employees who deliver its ethos of 'seva' (selfless service) to diners. 

"For us, we will make sure through our teams and our training and our systems that our guests are able to feel completely at ease and feel welcomed and looked after when they come."
