Bundobust confirms Liverpool opening and eyes second Manchester site

Bundobust commences northern expansion
Gujarati street food and craft beer concept Bundobust confirms its Liverpool opening and eyes up site for a second Manchester location.

Founded by Mayur Patel and Marko Husak, the company already operates restaurants in Leeds and Manchester and expect to sign a lease on a Liverpool site before the end of the year.

According to BigHospitality’s sister publication MCA​, the Liverpool restaurant is expected to open in late 2018, and will offer the same format and menu as its two existing sites.

Co-founder Husak describes the Liverpool site, at 13-19 Bold Street, as an “oddball” property, similar in size to the group’s existing Manchester unit.

 “This is the third time we’ve ended up taking the first site we’ve seen in a city. We’re very specific,” says Patel.

“We want sites that other restaurant brands probably would not be interested in. We don’t need the really glamorous sites with the huge premiums and we’re happy to do them up.”

The company has had its alcohol licence approved for the restaurant, which is crucial as the restaurant’s craft beer offering is central to its brand.

Bundobust will also be launching a new brewery range in late summer to early autumn.

“It will be contract brewed by Northern Monk, who are based in Leeds. We are going to have three house beers that will be available on tap in the restaurants and as cans, packaged, and we are looking to wholesale them as well,” says Husak.

The range will comprise a 4% pale ale, a mango lassi-style pale ale with lactose “to give it creamy mouthfeel”, and its existing Indian spiced wheat beer.

The restaurant has secured a large production kitchen on the outskirts of Leeds which will also house a brewery. The kit is expected to be able to produce 32 kegs of beer at a time, but the company will continue to support other breweries making beer in-house has the potential to be profitable.
