Filipino fusion restaurant Tins & Fins to launch in Margate

The team behind RAPSA will launch a restaurant serving Filipino fusion food on Margate seafront later this week.

Tins & Fins sees the group - which operate @Hoxton 100, Rapsa Play and Archway in London and The Rambling Pig in Surrey- collaborate with Pete Clucas (pictured left)  from Camden’s Lost Souls Pizza and True Romance and will be based at the Selina Hotel.

The menu has been created by executive chef Frances Puyat (pictured middle), whose CV includes Yotam Ottolenghi's NOPI restaurant in Soho. 

Dishes will include sea bream with papaya, coconut milk, and kalamansi ponzu; tuna tartare with cucumber, torched peach, and lobster crackers; oysters with ginger and jalapeno salsa; and rib eye with red onion confit butter, lemon juice, soy, and Don Papa peppercorn sauce.

The restaurant will also offer ‘inihaw’ (skewers) with options including prawn, rib eye, chicken thigh, and pork to be served with pickled salad and homemade dips. 

“Pete and I are so excited to collaborate on this new venture; having previously had success together at Lost Souls Pizza, 100 Hoxton, and old-school industry hotspot Ziloufs, we’re ready to go again,” says RAPSA owner and manager Andrew Zilouf (pictured right). 

“Margate is becoming a mecca for innovative food and good times, and that’s exactly what we’re bringing to town with Tins & Fins.”

Clucas added: “It’s super exciting to be joining so many of my industry peers down by the sea. There’s a strong community feel and wicked vibe to Margate that fits well with the laid-back style of hospitality we’re bringing to the area with Tins & Fins.”

Tins & Fins replaces HOWM, which was operated by the hotel.
