Michael Caines collaboration Palé Hall hotel recruits GM and head chef
Pim Wolfs, currently general manager at Macdonald Pittrodie House in Aberdeen, will open the 18-bedroom hotel on the edge of Snowdonia National Park as general manager in August with Gareth Stevenson as the restaurant’s head chef.
News of the appointments come as the property, previously the home of railway engineer and industrialist Henry Robertston, completes its transformation into a luxury hotel and restaurant.
Its co-owners, a former headteacher (Angela) and telecoms engineer (Alan) have individually designed each bedroom with William Morris prints and Zoffany furnishings while Caines is working with the couple on the hotel’s food and beverage offering.
Caines, who left Gidleigh Park earlier this year to pursue new projects, will work with Stevenson, who was part of the team which launched restaurant Michael Caines at the Abode hotel group, to develop breakfast, lunch, afternoon tea and dinner menus for the hotel's fine dining restaurant, Venetian themed alternative dining room and private dining area.

Palé Hall, which played host to played host to some of Britain’s most famous figures including Queen Victoria and Winston Churchill, will be relaunched as a sister hotel to Caines' new project Lympstone Manor (formerly Courtlands Mansion) in Devon.
