The Leconfield restaurant, situated in the market town of Petworth in West Sussex, will embark on an exciting new collaboration with eminent French chef Pascal Proyart, who takes on the role of chef consultant
Proyart will work alongside head chef David Lewis, re-creating all the menus and bringing his contagious enthusiasm for local produce and wealth of experience running one of the best kitchens in London, One o One.
“Since I grew up in the countryside on the coast of Brittany I am thrilled that I now have the opportunity to be back where all of my favourite foods are grown, nurtured and cared for," he said. "I love working with the brilliant producers, farmers, fisherman and winemakers in this beautiful part of England, it’s a joy."
