Etienne-Brewer-Ilias-Patsio
London-based restaurant group Village (previously Village London), owner of The Riding House Café, Village East and Rail House Café, has appointed Ilias Patsios (left) as head chef at the Rail House Café ahead of its opening next February.
The group has also appointed Etienne Bruwer as group executive chef, where he will oversee the kitchens at all three restaurants.
Patsios, originally from Greece, joins from The Arts Club in Mayfair where he worked as senior sous chef since 2013. He has also worked at Alain Ducasse at the Dorchester, Orrery and Rhodes 24.
South African born Bruwer began his career in London cooking at Terence Conran’s Fishmarket (Great Eastern Hotel) before moving to France where he gained experience working with the Pourcell Brothers and Pierre Gagnaire. He returned to the UK to work as senior sous chef to Andre Garrett at Galvin at Windows, Park Lane before joining Rhubarb Food Design as group executive chef.
